The “Madam” part of my name is a tribute to the 17th- and 18th-century European chocolate houses, where women would gather to socialize, share stories, and indulge in the finest chocolates. These women were known for their wit, sophistication, and love of all things chocolate – qualities that I aspire to embody in my own work. I’ m often asked how I come up with my chocolate flavors. The truth is, it’ s a pretty organic process.

I’ m inspired by everything from childhood memories to travels abroad. Take my “Midnight Mirage” truffle, for example. I created it after a trip to Morocco, where I fell in love with the scent of orange blossoms. I wanted to capture that essence in a chocolate, so I started experimenting with different combinations of flavors and textures.

I was a kid, watching my grandma craft these intricate, edible masterpieces in her tiny kitchen. The smell of melting chocolate, the sound of her laughter… it all just came together in this perfect moment.
